SINCE 1976
We are a third-generation family company, located on the shores of the Cantabrian Sea, in the fishing village of Laredo. An area considered worldwide as the birth place of the best anchovies. Here is where we elaborate 100 % of our products, we are specialists in the production of salting, Cantabrian anchovy fillets and Gildas (with double anchovies).
We use Bocarte / Boquerone (anchovies) “Engraulis Encrasicolus” exclusively fished by purse seining at dawn during the Spring Harvest. This fishing method is more selective, ecological and traditional. We personally select and acquire in the best Cantabrian fishing ports the highest quality and sizes batches.
After the preparation and maturation of the salted anchovies in cellar for an average time of a whole year, the product is elaborated with deep care and respect by Cantabrian expert ”filleters” hands, converting the salted fish in tasty anchovy fillets, becoming an exceptionally clean and appetizing anchovy, prevailing always quality and flavor over quantity, which ensures therefore a superb final product.
